KCBS categories

Master Series

The KCBS Master Series is the premier level of competition in sanctioned barbeque, featuring teams that cook:

  • chicken
  • ribs
  • pork
  • brisket

This division follows strict Kansas City Barbeque Society rules and is judged by certified KCBS judges based on appearance, tenderness, and taste. Teams compete for high scores that contribute toward national rankings and overall titles, making it the most competitive and prestigious category in the event.

Backyard Series

The KCBS Backyard Series is designed as an entry-level competition for newer or smaller teams, featuring only:

  • chicken
  • ribs

While more accessible, it still follows official Kansas City Barbeque Society rules and is judged by certified judges using the same criteria of appearance, tenderness, and taste. This division offers a great way for teams to experience competitive barbecue without the full four-meat requirement of the Master Series.

Appetizers

The KCBS Appetizers category highlights savory, small-plate creations that showcase a team’s creativity beyond traditional barbecue meats. In this category, anything goes; teams can use any ingredients, cooking methods, or garnishes as long as the entry qualifies as an appetizer.

Entries are judged by certified Kansas City Barbeque Society judges on appearance, taste, and overall execution, giving teams a chance to push creativity and flavor in an open-format competition.

Desserts

The KCBS Desserts category brings a sweet twist to competitive barbecue, where anything goes; teams may use any ingredients or preparation methods as long as the final entry is a dessert. From smoked sweets to inventive plated desserts, teams are encouraged to get creative without limitations on technique.

Certified judges evaluate each entry on appearance, taste, and creativity, making this one of the most open and imaginative categories in the competition.

The Wing Wars contest is a Friday evening competition featuring 12 teams made up of BBQ competitors and local first responders. Each team prepares 10 pounds of wings however they choose, with the exception of deep frying, and submits them for blind judging by both a panel and the public.

Guests can purchase a tasting tray featuring one wing from each team, allowing them to sample all entries and vote for their favorite.
